Food review: Osia Steak & Seafood Grill at Resort World Sentosa (RWS) - Cuisine worthy of its Michelin Star

Bagging one star at the inaugural Michelin guide Singapore is the Osia Steak & Seafood Grill. The famed restaurant is located right smack in the middle of Sentosa and will be a decent place for a nice romantic dinner after some fun at Universal Studios. We checked it out ourselves to see why it deserved its accolades.


The restaurant is located opposite its fellow awardees, Joel Robuchen and along the walkway to the Merlion attraction.The facade resembles a scene from an old English movie and makes passerby intrigued to check out whats on offer.


The restaurant is helmed by celebrity chef Scott Webster whom had remarkable experiences in restaurants all over the World. He is also the brains behind Australian Culinary Consultants (ACC), the organisation that has developed unique dining concepts for brand name hospitality groups like Intercontinental and Westin.

Chef Douglas Tay joined him to churn out mouth watering dishes using Western culinary techniques. He combines the food with his Asian roots, transforming them into beautiful contemporary dishes to excite your tastes buds. His multi culinary awards is evident from the food which are infused with a myriad of flavours that serve to excite your senses.

The one page menu is fairly easy to understand and provides a decent selections of entrees and mains. Their stone hearth flat bread is famous and is a must try while dining. We had too much to eat during our lunch at Equinox and decided to skip and return for it the next time.


We started our meals with the magnificent Yellowtail Kingfish. The dish is served cold and almost like a Sashimi. The salsa and bits of pineapple chunks provided the tanginess and there was an interesting blend of flavours with the sweet and milky taste from the coconut milk water.

Next up we had the mud crab cakes. The crunch we get from every mouthful is amazing and we can taste chunks of crab meat with every bite. It was not too oily and the sauce help to balance out the flavours.

Steak is almost every man's go to dish when available and I follow the trend by ordering the MS 2+ Black Augus Beef Tenderloin which is the equivalent of USDA choice or Japan's A2 grade. In other words, it is a decent cut but not a super high grade. I like my steak cooked to a medium doneness and it did not disappoint. The steak is served over Opeh leaf which is similar to those found in some of our Fried Hokkien Noodles stalls. I had red wine sauce to go with my steak which was a not too bad a choice. Flavours wise, the meat had a stronger beef flavour than usual and beef purists will definitely enjoy it.




Sambal spiced chutneys and pickles are served on the side to spice up the dish which might be too spicy for some.




Check out the delightfully pink flesh and those perfect grilled marks.


The missus went with the seafood option as usual and the grilled Leory Fjord Trout which is farmed in Norway. This is a smaller fish than the traditional salmon but also sports the indistinguishable red flesh that turns a pretty pink when cooked. Grilling fish is always a challenge and it tends to dry out the fish if timing is not properly grasped. The missus fish had it done to perfection with moist meat and a nice firm texture.



Similarly spiced chutneys and pickles are served for sides.


For both our meats, we are presented with 3 different sauces to enhance the flavours and i enjoyed the mango salsa version.


To end off the night on a sugary high, we ordered the famous Souffle and my God, was it excellent. The crunchiness of the Praline is well complimented with the sour cream Ice Cream. It was a great experience to pour the creamy custard into the souffle and combine it with the ice cream. It is a interesting mix of warm and cold as the souffle melts the ice cream and blends the flavours together in your mouth. The mix of textures is simply amazing. This takes 40 mins to make so did signal to your friendly service staff when you are almost done with your mains




For a fine dining experience, Osia did its job well with its fine cuisine and excellent service. Our stomachs were filled to the brim after our dinner but there is still so much more to try. We could see why the restaurant deserve its Michelin star and cannot wait for our return trip.
