Food review: Hana Japanese Restaurant @ The Forum Shopping Mall, Orchard Road ~ One of the best Omakase in town

Hana Japanese Restaurant is tucked in a quiet little corner of Orchard road and is famous for their floating noodles which appears to be floating in the air. Having bitten by the Omakase bug in Sou Omakase in Kuala Lumpur, where the dishes are served intricately and artfully like western style fine dining, we decided to head to Hana and see what the chef has to offer.




The ambience is classy and relaxed, perfect for a friend's gathering or a nice date with your loved ones. Space is a premium in Singapore but the restaurant did not scrimp on space and gave patrons the required amount of privacy by not placing tables too close to each other.

Bar seats are also available which allow patrons to witness first hand the dedication of the chef at work.


We ordered some green tea to start and was pleasantly surprised that it was not charged.


The first dish is an appetiser of trio with Chuku Hotate, Surf clams and jellyfish. They were nicely presented and packed a nice crunch with their nice chewy textures. They did their job well and whet our appetite. I particularly enjoyed the firmness of the Hotate (Scallops) flesh and the pleasant spice that came with the seasoning. The surf clam salad is best enjoyed last among the three to balance out the spice from the other two with its creamy mayo flavours.

The 2nd appetiser was the aphrodisiac oyster. This was not the usual oysters but one hell of a huge one, measuring easily over 10cm! Freshness is up there with the beautiful flavours hitting all the right notes. It was garnish with some pea shoots and the slightly spiced vinaigrette enhance the overall experience.

Next one is one of the highlights of the omakase and that is the sashimi platter containing ingredients that are importing directly from Japan like the Tuna. Very generous slices of salmon belly, swordfish, scallops and sea bream join the fray into our welcoming palates. The chunky slices of the fishes were juicy and the texture of the fresh seafood is simply amazing. The tuna belly was melt in your mouth good!

Our fourth dish is the Hamachi Kama (Yellowtail collar) which is most the premium part of the fish and is not commonly found on menu. It is also the part of the entire fish that is juiciest and also have the highest concentration of tasty fats. 

The dish we had is perfectly grilled with only the most minimal seasoning to retain all the natural flavours. We had an awefully good time enjoying the crisp skin and also the juicy flesh.



Next up is a tempura dish and it was a scallop tempura and not normally found on tempura menus. The batter covered the plush and crunchy scallops which exploded with beautiful flavours with every bite. The dish is served with a teriyaki dipping sauce which provided another depth in flavours and enhance the already sweet taste of the scallops.






Premium Sushi is our 6th dish and the trio of delights send waves of euphoria down my belly as they were presented in front of us. The plate of Sweet Prawn and Uni (sea urchin), Hamachi belly (yellowtail) and tuna sushi was a sight to behold. The combination of the sweet prawn and the luxury sea urchin is a perfect match. The Hamachi and Tuna sushi were melt in your mouth good and after they completed their boogie woogie on our tastebuds.

Our excitement did not end and the 7th dish was the premier Wagyu beef slices. The slices of beef are grilled to perfection and had a good amount of fat in that that they ooze flavours. Each medium rare slice required effortless chewing and it was certainly a pleasure to pile up some of the condiments to savour together with the slices.

By then our bellies were already full to the brim and we were glad that our next course is a delightful bowl of soup. The gentle tofu and mushrooms simmered in dashi stock, warm our bellies and help to wash down some of the more oily food we had earlier.

Our 9th and last course completed our meal with a bang with the Champagne grape and Yuzu sorbet. The Yuzu help to balance the slightly sweet taste of the grape and were very satisfying.

We had an awesome time at Hana Japanese Restaurant and the Omakase experience is splendid. It was a showcase of Japanese culinary masterclass which we enjoyed tremendously. They were a few blips with some of the courses taking longer than it was necessary and the newer staff could not tell us what we were having but otherwise, it was perfect!

We used our entertainer 1 for 1 for this which practically paid for the app itself!
